We celebrate the core of each Region’s cuisine. The freshest seasonal vegetables, meats and fishes direct from farm and sea. Pecorino cheese, extra virgin olive oils, cured meats and wonderfully scented fruits.

Imagine preparing authentic Mediterranean Seafood dishes, and maybe even a lesson in producing fresh mozzarella for your Caprese Salad! Each lesson is about 4 hours. Offering a 2 Day Culinary Experience **

Spend a day in a Lemon Grove. Make fresh pasta using Amalfi’s celebrated lemons, and prepare other southern Italy specialties. Try your hand filling ravioli laced with a sauce made from the delicate cherry tomatoes which grow on the terraced cliffs.

Just for the fun of it - Experience making Fresh Mozzarella! What a day!

Want more? - see below - We are happy to register you for other cooking days which will entice you with Mediterranean recipes that have developed over centuries based on the freshest available ingredients and intense flavors, like pesce all’ acqua pazza - poached sea bass fresh today from the sea; or golden zucchini flowers stuffed and served as an appetizer. Each day we’ll enjoy a full lunch, prepared by you and accompanied with local wines.

Savor the rich, earthy flavors of Tuscany. Join us and experience true Tuscan home cooking by enthusiastic Italian cooks. They really love sharing their passion for traditional roasted or grilled pork, beef or lamb, prepared with herbs, grilled seasonal vegetables and hearty soups. One of our favorite soups is made with chickpeas and finished with fresh rosemary and a drizzle of fine olive oil! Dig your fingers into dough for “pici” Tuscany’s unique pasta. Love cheese? This is the home of Pecorino - a rich tasting cheese made from local sheep’s milk. We visit a boutique frantoio to view the method for hand produced extra virgin olive oil. We end with a tasting of their gold medal prize winning olive oils (you may purchase your favorite one direct). It’s all here for You! Enjoy lunch with paired local wines for the perfect flavor profile.

The Cuisine of Sicily is representative of its position as an historical crossroad in the Mediterranean Sea. Every culture left its culinary stamp having brought with them herbs, spices, grains, nuts, and cooking methods.

We see this represented in one of my favorite recipes for Ravioli with pistachio and Shrimp! Other traditional preparations include Sicilian Caponata, a blend of eggplants, capers, tomatoes and olives. Wonderfully scented Lemon leaves are stuffed and baked with a flavorful “meatball” mixture. Take a trip to the local market to buy absolutely fresh fish, meats, vegetables and fruits for the meal you will prepare and enjoy with local Sicilian wines cultivated in the rich volcanic soil of MT Etna. How can you resist!
